I took extra time and waited for her to come to me, dodged all I could and slowed her down to get a split saber attack on her. I was also playing with only 3 stims, so I went back and got 2 more to fight her with a total of 5.

It's not the first game in history where you can upgrade the amount of healing items you have and it's an action adventure game where you can wander around the map to find more upgrades, so not stumbling upon a stim upgrade is really weird.
